The Fancy Breakfast Club
Very pale yellow with fine, persistent bubbles. It smells like green apples and citrus peel with a tiny hint of freshly baked bread on the back end. It’s crisp and zesty, with a clean finish that cuts right through orange juice.
⭐⭐ (The bubbles get you to the "fun zone" faster, and the sugar in the mimosas is the real enemy here, not the wine).
Orange juice (obviously), eggs benedict, or salty appetizers like fried almonds and olives.
For a Valentine's mimosa, this was a total over-achiever. It’s much more refined than the cheap "headache-in-a-bottle" sparkling wines back home. It has enough personality to be drank on its own, but it’s humble enough to let the OJ share the spotlight. A solid choice for when you want to feel "classy" at 11:00 AM.
